BAHAN – BUMBU MEREBUS DAGING:

Didihkan air dan masukann potongan daging, serai, lengkuas, daun jeruk purut, jahe, kaldu bubuk, lengkuas dan garam. Masak hingga daging empuk; 2. Haluskan daging di ulek, jangan digiling di mesin karena merusak seratnya. Ulek hingga berserabut. Sisihkan; 3. Haluskan hingga lembut bawang merah, bawang putih, kemiri, cabe merah, garam, lengkuas, jahe, kunyit, lada, dan ketumbar; 4. Panaskan wajan dan masukan semua bumbu halus, daun jeruk, sereh, daun salam dan santan encer. Aduk rata; 5. Tambahkan daging sapi yang telah dihaluskan, masak hingga santan terserap oleh daging; 6. Tambahkan gula pasir, kaldu bubuk, dan irisan gula merah, dan aduk rata. 7. Tuangkan santan kental, dan masak kembali hingga santan terserap oleh daging dan tekstur daging agak kering; 8. Panaskan minyak. Goreng daging yang telah diungkep. Masak hingga kering dan berwarna kuning kecoklatan; 9. Masukan daging yang telah digoreng ke dalam alat pemeras kentang. Tekan kuat-kuat hingga minyak dalam daging terperas keluar; 10. Keluarkan daging dari alat pemeras kentang dan diaduk menggunakan garpu agar tektur abon menjadi mawur tekturnya. Dinginkan; 11. Tuangkan abon ke dalam tempat saji. Abon siap digunakan sebagai penyerta makan lainnya; Untuk 800 gr
INGREDIENTS – SEASONING FOR BOILING BEEF:
1 kg beef
1 lt water
2 sticks crushed lemongrass
2 pieces of lime leaves
2 cm crushed ginger
4 cm crushed galangal

300 ml runny coconut milk from 1 coconut
40 gr sugar
2 tsp beef stock powder
1 tbsp sliced brown sugar
200 ml cream coconut milk from ½ coconut

COOKING METHOD:
1. Bring the water to a boil and add beef, lemon grass, galangal, kaffir lime leaves, ginger, stock powder, galangal and salt. Cook until meat is tender;
2. Puree the meat in a pulverizer, do not grind in the machine because it will damage the fibers. Knead until stringy. Set aside;
3. Blend until soft onion, garlic, candlenut, red chili, salt, galangal, ginger, turmeric, pepper, and coriander;
