BAHAN – BAHAN:1 buah jantung pisang
250 ml santan kental 150 gr daun kenikir 4 sdm minyak goreng BUMBU – BUMBU: 9 buah cabe merah keriting, haluskan 5 buah cabe rawit, biarkan utuh 12 butir bawang merah, haluskan 5 siung bawang putih, haluskan 2 cm kencur, haluskan 2 cm kunyit, haluskan 1 sdt terasi, haluskan 3 butir kemiri, haluskan 3 cm lengkuas, potong membulat, memarkan 2 lembar daun salam 2 sdt kaldu bubuk rasa ayam 1 sdt gula pasir 1½ sdt garam halus 1 sdt bubuk ketumbar CARA MEMASAK: 1. Kukus jantung pisang selama 30 mnt atau hingga ¾ matang. Belah 4 bagiuan dan sisihkan; 2. Rebus daun kenikir selama 2 mnt. Setelah diangkat, langsung rendam dengan air matang dingin. Lalu potong-potong dan sisihkan; 3. Panaskan minyak. Lalu tumis bumbu halus hingga harum. Tambahkan lengkuas dan daun salam. Aduk rata; 4. Tuangkan santan. Tambahkan kaldu bubuk, garam, gula pasir dan cabe rawit. Masak sambal diaduk-aduk hingga mendidih; 5. Tambahkan potongan jantung pisang. Masak hingga bumbu meresap dan semua bahan matang; 6. Siapkan piring saji. Atur rebusan daun kenikir sebagai alas jantung pisang. 7. Siram jantung pisang dengan saus pecak panas. 8. Sajikan panas sebagai lauk. Untuk 4 porsi. INGREDIENTS: 1 pc banana heart 250 ml heavy coconut milk 150 gr kenikir leaves 4 tsbp frying oil SPICES: 9 pcs red chilies, grounded 5 pcs whole cayenne pepper 12 pcs shallot, grounded 5 cloves garlic, grounded 2 cm aromatic ginger, grounded 2 cm turmeric, grounded 1 tsp shrimp paste, grounded 3 pcs candlenuts, grounded 3 cm galangal, sliced and crushed 2 salam leaves 2 tsp chicken seasoning 1 tsp granulated sugar 1½ tsp fine salt 1 tsp coriander powder COOKING METOD: 1. Steam banana heart for 30 minutes or till it is ¾ cooked. Cut into 4 parts and set aside; 2. Blanch kenikir leaves. Soak with cold water once it is lift up from the pan. Then, cut coarsely and set aside; 3. Heat the oil. Then, sauté the grounded spices until it is fragrant. Add galangal and salam leaves. Stir well; 4. Pour coconut milk. Add chicken seasoning, salt, sugar, and cayenne pepper. Keep stirring until it boils; 5. Add banana blossom on the pan. Cook until the spices absorb and all the ingredients cook; 6. Get ready the serving plate. Arrange kenikir leaves as underliner of banana blossoms. 7. Pour Pecak sauce on top of banana blossoms; 8. Serve hot as main dish; For 4 potions.
