PUDING BUAH NAGA MERAH PUTIH

BAHAN – LAPISAN PUDING MERAH:
100 gr buah naga merah, potong-potong 800 ml air 100 gr gula pasir 7 gr bubuk agar-agar putih ¼ sdt garam halus 40 ml susu kental manis BAHAN - LAPISAN PUDING PUTIH: 800 ml susu tawar cair 7 gr bubuk agar-agar putih 90 gr gula pasir 40 ml susu kental manis ¼ sdt garam halus 50 gr white cooking chocolate BAHAN – SAUS VANILLA: 1 butir kuning telur 500 ml susu tawar cair 1½ sdm tepung maizena 90 gr gula pasir ¼ sdt garam halus 1 sdt rhum 1 sdt vanilla essen CARA MEMBUAT – LAPISAN PUDING MERAH: 1. Masukkan potongan buah dragong ke blender dan campurkan dengan air. Saring untuk menghilangkan biji buahnya; 2. Larutkan bubuk agar-agar putih, gula, susu kental manis dan garam kedalam sari buah naga merah dan aduk rata; 3. Aduk terus dan masak hingga mendidih; 4. Tuangkan ke dalam Loyang puding yang telah dibasahi dengan air dan dinginkan hingga mengeras; CARA MEMBUAT – LAPISAN PUDING PUTIH: 1. Larutkan bubuk agar-agar putih, gula pasir susu kental manis dan garam ke dalam air dan aduk rata. Lalu masak hingga mendidih; 2. Aduk terus dan tambahkan white cooking chocolate. Pastikan cokelat telah larut dengan sempurna sebelum api dimatikan; 3. Tuangkan lapisan putih diatas lapisan merah. Dinginkan hingga puding mengeras; 4. Keluarkan puding dari cetakan. Atur diatas piring saji. Hindangkan dengan saus vanilla; CARA MEMBUAT – SAUS VANILA: 1. Larutkan tepung maizena, gula pasir dan garam kedalam susu tawar cair; 2. Aduk terus hingga mendidih dan matikan api apabila saus telah mengental; 3. Selagi saus masih panas, tambahkan essen vanilla dan rhum dan aduk rata; 4. Ambil 3 sendok saus vanilla panas dan tuangkan kedalam kuning telor. Aduk rata; 5. Tuang campuran kuning telor ke dalam saus dan aduk rata; 6. Dingingkan dan sajikan sebegai pelengkap puding; Sajikan dingin. Untuk 12 porsi
INGRIDIENTS – RED PUDDING LAYER:
100 gr of cubed dragon fruit
800 ml of water
100 gr of granulated sugar
7 gr of white jelly powder
¼ tsp of salt
40 ml of condensed milk
INGRIDIENTS – WHTE PUDDING LAYER:
800 ml of whole milk
7 gr of white jelly powder
90 gr of granulated sugar
40 ml of condensed milk
¼ tsp of salt
50 gr of white cooking chocolate
INGREDIENTS – VANILLA SAUCE:
1 pc of egg yolks
500 ml of whole milk
1½ tbsp cornstarch
90 gr of granulated sugar
¼ tsp of salt
1 tsp of rum
1 tsp of vanilla essence
METHOD – RED PUDDING LAYER:
1. Blend inner flesh of dragon fruit with water until smooth. Strain to remove the seed of the fruit;
2. Dissolve white jelly powder, sugar, condensed milk and salt into dragon fruit juice and mix them well;
3. Stir continuously and bring them to a boil;
4. Pour into a pudding pan that has been moistened with water and refrigerate until hardened;
METHOD – WHITE PUDDING LAYER:
1. Dissolve white jelly powder, sugar, condensed milk and salt into water and mix them well. Then bring them to a boil;
2. Keep stirring and add the white cooking chocolate. Make sure the chocolate is completely dissolved before turning off the heat;
3. Pour the white layer over the red layer. Refrigerate until pudding hardens;
4. Remove the pudding from the mould. Arrange on a serving plate. Serve with vanilla sauce;
METHOD – VANILLA SAUCE:
1. Dissolve cornstarch, sugar and salt into whole milk;
2. Keep stirring until it boils and turn off the heat when the sauce has thickened;
3. While the sauce is still hot, add vanilla essence and rum and mix them well;
4. Take 3 tbsp of hot vanilla sauce and pour it into the egg yolks. Stir well;
5. Dilute the egg yolk mixture into sauce and stir well;
6. Chill and serve it as a complement to pudding;
Serve cold.
