Ayam Goreng ala KFC

 BAHAN - BAHAN

1000 gr ayam, potong 10 atau sesuai selera Minyak untuk menggoreng BAHAN – MARINASI: 1½ sdt italian mixed herbs kering 1 sdt bubuk kaldu instant rasa ayam 1 sdt garam halus 2 sdm air jeruk lemon 400 ml susu tawar cair ( susu UHT) BAHAN – ADONAN TEPUNG KERING : 500 gr tepung terigu serba guna (cap Segitiga Biru) 2 sdt bubuk kaldu instant rasa ayam 1½ sdt baking powder 1½ sdt garam halus 1 sdt lada bubuk 2 sdt bawang putih bubuk 1 sdt jahe bubuk 2 sdt bubuk paprika 1 sdt bubuk ketumbar 1 sdt Italian mixed herb kering

BAHAN – BUMBU HALUS: 45 gr bawang bombay, haluskan 3 siung bawang putih, haluskan 2 cm jahe, haluskan 1 sdt gula pasir ½ sdt garam halus 60 ml air BAHAN – ADONAN TEPUNG BASAH: 100 gr tepung terigu ½ sdt garam halus 250 ml air dingin CARA MEMBUAT - MARINASI: 1. Italian mixed herbs, bubuk kaldu instant rasa ayam, garam, air jeruk lemon dan susu tawar cair dicampur dan aduk rata; 2. Rendam dan simpan ayam di dalam lemari es selama 6 - 12 jam; CARA MEMBUAT – ADONAN TEPUNG KERING: Campur semua adonan tepung kering dan aduk rata. Sisihkan. CARA MEMBUAT – BUMBU HALUS: Semua bahan bumbu halus diblender hingga lembut dan sisihkan CARA MEMASAK: 1. Ayam yang telah direndam, dibumbui dengan bumbu halus dan aduk rata; 2. Celupkan ayam ke dalam adonan tepung basah. Setelah ayam tertutup dengan adonan, pindahkan ke dalam adonan tepung kering; 3. Pastikan seluruh permukaan ayam terlapisi dengan tepung secara merata; 4. Panaskan minyak banyak. Goreng ayam hingga matang dan berwarna kuning emas.

Sajikan panas dengan sambal Matah. Untuk 8 porsi. Tip: Jika menginginkan lapisan tepung lebih tebal, lakukan proses penepungan ( breaded) sebanyak dua kali. Taburi ayam dengan adonan tepung kering berbumbu, lalu celupkan ke dalam adonan tepung basah, selanjutnya gulingkan kembali ayam ke adonan tepung berbumbu. Dengan metode ini lapisan tepung lebih tebal. INGREDIENTS: 1000 gr chicken, cut into 10 pcs or as your wish Oil for frying INGREDIENTS – MARINATION: 1½ tsp of dried italian mixed herbs 1 tsp of chicken seasoning powder 1 tsp of salt 2 tbsp of lemon juice 400 ml of whole milk INGREDIENTS – DRY FLOUR SEASONING: 500 gr of all-purpose flour 2 tbsp of chicken seasoning powder 1½ tsp of baking powder 1½ tsp of salt 1 tsp of pepper 2 tsp of garlic powder 1 tsp of ginger powder 2 tsp of paprika powder 1 tsp of coriander powder 1 tsp of dried Italian mixed herbs INGREDIENTS – GROUND SPICES: 45 gr of ground onion 3 cloves of ground garlic 2 cm of ginger, ground 1 tsp of sugar ½ tsp of salt 60 ml of water

INGREDIENTS – BATTER: 100 gr of flour ½ tsp of salt 250 ml of cold water METHOD – MARINATION: 1. Dried italian mixed herbs, chicken seasoning powder, salt, lemon juice and whole milk are mixed and stir well; 2. Soak and keep the chicken in the refrigerator for 6 - 12 hours; METHOD – DRY FLOUR SEASONING: Mix all ingredients of dry flour seasoning and stir well. Set aside METHOD – GROUND SPICES: Blend all ingredients in a blender until smooth and set aside COOKING METHOD: 1. Marinated chicken is seasoned with fine spices and mix well; 2. Dip the chicken into batter. After the chicken is covered with batter, move it to the dry flour mixture; 3. Make sure the entire surface of the chicken is evenly coated with flour; 4. Heat a lot of oil. Fry the chicken until cooked and golden yellow. Serve hot with chili sauce (sambal Matah). For 8 servings.
